doing sumo.

He is doing gymnastics.

doing snow skateboard.

I'm not sure about sumo.

I'd say that "doing snowboarding/doing skateboarding" are uncommon.
We'd more likely say, "He's skateboarding." "He's gone snowboarding this afternoon."
