split/break open in the water

Have you ever boiled eggs, and found them split open in teh water? Next time try to remmember this physics lesson: heated air expanded.

Have you ever boiled eggs, and found them break open in the water? Next time try remembering this physics principle: heated air expanded.

Are the above two versions correct and identical in meaning?

Besides, I'm really confused by "to remember" and "remembering." Which do you think fits better in the context and why? Thanks.
