The diet coke splashed out of the can after he shook it.

Is this correct?

It's correct; however, 'sprayed' or 'gushed' or 'spurted' might be better than 'splashed'.

It also occurs to me that coke won't spray out of a shaken can unless the can is opened, so your sentence seems to leave out a step.
