In the following dialog, which of the answers from B is correct?

A: I'm seeing someone.
B: Really? Someone I know?
B: Really? Anyone I know?

I hear both, depending on the reaction you wish to indicate. (Ouch! this is one of N2G's person-switches!)

While both are correct, the second is more usual. anyone goes most naturally with a question.

If so, I don't see how they are related

Not related specifically to any one example. More related to your contention that "native speakers" have a habit of switching to "you" out of a clear sky, with no particular justification - in the process of trying to explain some general principle of life.
