doubt and will together still give enough certainty, but then you jump into uncertainty with you'd have and then you confirm that you'd is from you would by wouldn't you. Maybe we could have understood would as a replacement for another verb, but you have would have to. so would is would

#2 fine, although in formal writing I'd omit the period after 'me'. You might wish to replace it with a comma.

#3. I'd write it as I like finding fun in every situation but, then again, I can be pretty boring. A comma before the 'but' is possible, but I think that makes too many commas.
