Some questions regarding adjectives

1- Which is the noun form of the adjective "active", activeness or activity? There seem to be many adjectives which can be turned out into a noun form in both ways. Hence, we require some indication to determine the correct option. Is there any means whereby we are able to opt for the right version for those types of adjectives, please? (-ty, or, -ness).

2- We have dozens of adjectives to apply for the amount of countable and uncountable nouns, namely, much, many, a lot of, lot of, a great deal of, plenty of, very, loads of, a great/large number of, and so on.

The query is that which of them are for positive and which for negative concepts of the sentences? For instance: There aren't many/a lot of good classes here.

If there exits a list through which we know what adjective for what kind of sentence is appropriate, that'd be very excellent.
