some questions on modifiers

Hi,
1) Let us pretend I am playing a game named "Desk Game" with others. How should I address the game callling? Calling it a "Desk Game" would be good if there were other desk games but feel that we should not have many varieties of this game.

Hi, all, let's play (the?) 'Desk Game."
We played (the?) "Desk Game" and had a mighty constructive, fun time.

2) Can the word "one" assume the roles of a determiner and a number or adjective (I don't know which) in the cases similar to the one below?

He had one apple and the one apple he had was taken from him. Sad, indeed.

1-- I don't think games have ' Game ' in their names: Scrabble, Monopoly, Snakes-and-Ladders, Poker, Twister, Charades, Spin-the-Bottle , Tennis, Chess, Parcheesi, Raiders, Ghost, Name That Tune, The $64,000 Dollar Question, Trivia, Football , etc. The game name you have created is artificial (and pretty boring), but if it is really called Desk , then: Hi, all, let's play Desk !
