Some grammar help please

I'm going through a grammar refresher book and there are some things that I don't understand as it didn't go into much detail in the solution, can anyone help?

It states words ending in -fe change to -ves to make it plural, but then it goes on to make the following ...

giraffe > giraffes (not giraves and yes I know the answer is giraffes from common knowledge ... confused!

Also oaf > oafs (not oaves)

Probably exceptions.

Then other confusing problems, why is it if's, and's or but's and not ifs ands or buts? (the apostrophe s)
