Could you please tell me if the following sentence is correct ?
On working days I have my breakfast so early .

The use of 'so' makes it sound almost as if having breakfast were a dreaded chore (but maybe you want the sentence to sound like that). If that's not the case, I would suggest that you replace 'so' with 'very', or 'really', or perhaps some other more appropriate word.

If you wish to keep the 'so' though, you could also expand your sentence to something like this:

On workdays,

On work days I have breakfast very early.

Not sure if Mr. M. was referring to my post or correcting the original sentence, but just for the record: 'workdays' and 'work days' are both acceptable.
