Which is the correct spelling:

Both are acceptable, but use smoky if you don't want to be old-fashioned. Right now, when people open the latest editions of Oxford, they can hardly ever find smokey.

Both. I will continue to use smokey though, because smoky screams spelling error to my brain when I try to use it. And I don't really care if it makes me 'old fashioned'.

I agree with you! Plus e makes o says it's own name. It seems like without the e it would be pronounced "smocky."

No. It would be pronounced "smocky" if it were spelled "smocky".

When you use noisy by dropping the 'e' from noise, do you get the same spelling error screams?

'Smoky' is by far more common. I see no justification for including the 'e'.
