Small beans?

Hello,

What do you call the beans in this picture?

We call them "small (green) beans"

And the ones in this picture?

We call them "flats".
They need not be green. In Tuscany for example you can find them white-ish. They're excellent with a tomato sauce.

Also, would you call those vegetables? Or Greens? I remember hearing "green" used for green stuff but I'm not sure if it's countable or uncountable, and if it only refers to vegetables.

Thank you
H.
