Singular subject pronouns becoming plural object pronouns?

When do singular subject pronouns become plural object pronouns? What is the rule and where I can I found out more?

Please dissolve my confusion about the usage of plural pronoun their in the following sentences:

When a speaker loses eye contact, they often end up turning their back to the audience. A speaker should never turn their back to an audience.

the same about he/she or his/her in the beginning of the sentence and they in the next place of the sentence.
