singular plural

A bagel is bread with a hole ine the middle, like a doughnut. Unlike other bread products, bagels are boiled in water before they are baked. This cooking process makes bages chewy and gives them a shiny surface.

Q) Regarding the last sentence, I was wondering if "a shiny surface" can be shiny surfaces because "them" is plural.
Is both correct or only the original?

Only the original is natural. If you used the plural, it would suggest that the bagel had more than one surface.
