I've heard the phrase 'pour your heart out.' Suppose it's plural, how do you write it? Is it 'pour their hearts out' or 'pour their heart out'? Hearts or heart? Or does it matter?

I would use "hearts". It is a figure of speech, so it does stand outside grammar to some extent, but you might as well keep the number straight because it makes sense that way. Each one has a heart, and each one pours it out. They have hearts the same way they have heads.
