Single quote marks (instead of double) to underscore key words in text

In lieu of italics, can I emphasize key words in text with single quote marks, not the usual double quote marks?

The terms 'muffin choker,' 'earth muffin,' and 'crunchy granola' are considered offensive by many environmentalists.
