a lot of people say this is wrong

People say you should say either : Since when do you do that? or Since when have you done that but not Since when did you do that.
What do you say to that?

I don't really think it sounds very natural, but ok. A lot of native speakers have said so.

Since is used with present perfect.

I haven't done that since...
not I didn't do that since...

That is different from your original. 'Since when' is a fixed phrase when fronted on a question: it is an expression of displeasure or surprise.
