It's been 20 minutes since I have taken a taipan bite.

Or,

It's been 20 minutes since I took a taipan bite.


Which one is correct?

Of the two, I'd go for the second. You may find 'suffered' a better word than 'took'. However, you'd sound more natural if you said: It's been twenty minutes since I was bitten by a taipan.
