Why we did not use "performed" instead of "have been performed?"

"Have been performed" is correct. It means "have been acted."

e.g.
Shakespeare's plays have been performed (acted) by thousands of actors all over the world.

Your comparison between simple past and present perfect is faulty. You changed the original from passive to active. Your comparison should be between "were performed" (simple past, passive) and "have been performed" (present perfect, passive).
