Simple or Continuous tense?

Which of these are correct please?

1 As I pulled out/ I was pulling out, I saw her do that.
2 When people have/are wearing nice looking shoes, I look at them.
3 When I worked/was working I was in contact with a lot of people.

Some of these could be said to be correct either way. Really depends on the rest of the context of the conversation and if you want to highlight them as a general statement or as something temporary. I would say: As I pulled out, I saw her doing..............
