I was off sick from school for 2 weeks because I was sick with Malaria.

I was off work yesterday because I fell sick.

I was off sick from work.

I have been ill/sick with malaria for 2 weeks, so I can't come to school.

If this is correct, then, I wonder why the first one is incorrect i.e. "I was sick with malaria".

You do not require "sick" twice in the sentence. You have already indicated that you were/are ill, and are merely confirming what is wrong.
