If I am sick today, can I say to my bias like this: I want to take a sick leave?

You cannot say "a sick leave". I also question whether "want to" is the best way of expressing this. It sounds as if you have a choice, whereas if you're not well enough to go to work then there's not much you can do about it. You could say "Sorry, I'm not feeling well enough to come in to work today" (this is assuming you are telephoning from home).

"bias" makes no sense in your question
