Should it be singular or plural

Experts,

At a restaurant, requesting things like below for the dish that you've just ordered, should the word "sauce" / "spice" be singular or plural?

Please tell the chef to go easy on the spice/spices.
Please tell the chef to go easy on the sauce/sauces.

Either will work in both cases, but the first makes more sense, as there are likely to be more spices than sauce, and 'sauce' is more usually uncountable than is 'spice'.
