Should I say 'consume' or 'eat' in the sentence? Is 'energy-rich' (which has the same ending as 'protein-rich) correctly used?

With a familiar food-plate model showing the approximate relative proportions of each of the food groups, one is motivated to (consume, eat) a high proportion of vegetables and fruits, moderate amounts of energy-rich and protein-rich foods, and less fatty and sugary foods.
