1) She's a person who puts their heart and soul into their work.

Here "who" refers back to "a person", and "a person" is assumed to be gender-neutral.

2) She's a person who puts her heart and soul into her work.

Here "who" refers back to "a person", and "a person" is assumed to have the feminine gender. (she = a person)

Are (1) and (2) correct/idiomatic English?
