The more common expression is 'a leg of lamb'.

With that meaning, the sentence sounds like a threat in a butcher's shop, ie 'Don't make me stab you with this leg of lamb'.

I had always thought the word in reference to "shanking" somebody specifically referred to the kind of homemade knife found in prisons. (Maybe "homemade" isn't quite the word I want
