Can we set off the way?
i.e, "They set of the way"

How about this one?
"Eating dinner, they set off."

You probably want to say, "Having eaten dinner they set off." Unless, of course you mean that they were eating dinner while leaving.

What if I use "after"?
i.e, After eating dinner, the set off the way.

after is fine, but I see no need to say "the way". "On their way" is natural.
