She loves to wear that shoes so much so when we took it off, she cried.

The only problem is with the "shoes" sentences: you must say "those shoes," and "when we took them off."

You may not omit the "that."
Repeating the "so" in the second version is not idiomatic.

The double "so" is usually used in answering a question:
Did you enjoy the movie? (reply) So much so that I immediately bought another ticket and watched it again!
In other words, the second "so" refers back to a previous statement.

When I say "The only problem is with the shoes sentences," I mean the others are okay.

If I said, "The only problem with the shoes sentences is that you need to use plural pronouns," then you might wonder about the other sentences.
I agree that it can be confusing.
