Sentences having to do with culinary.

Could you please help by telling me if these are, firstly, natural to an English speaker and how you would have said them?

A good chef can recognize anything you give them. If it’s fish, he’ll know what (kind of) fish he’s eating.

You judge a chef’s dexterity based on how good his sauces are/based on his sauces.

You can tell whether someone is a good chef

how well he makes his sauces.

A sauce needs to have the right balance of sweet and salty. You don’t want to add something that throws off its balance.

thank you
