Are all these sentences correct:


a) "That I know, there is only one vegan restaurant in town."


b) "There is only one vegan restaurant in town that I know of."


c) "To my knowledge, there is only one vegan restaurant in town."

a) At the beginning of a sentence it's "As far as I know" (or "So far as I know"), not "That I know".
b) Perfect.
c) Good. (My personal preference would be to remove the comma.)
