Sentence without a subject

I would be grateful if someone could let me know what is the subject of the bold phrase of the following sentence - I could guess it might be "I" (And I don't know why). Plus, please let me know what are the other possible occasions in which we could remote subject if it's possible.


“They love it. And don’t know why,” he sighs. It just seems to be something they really like and that’s it.”

Consider these example of correct English..

(and is not wrong, but the sentence deals with opposites, so but sounds better.)

eg They love it but I don’t know why.

eg They love it but they don’t know why.
