Mister MicawberI wish you a Happy New Year.
Thank you.

I am just curious, is it possible in any way to use the 's' and say Happy New Years. Because I have seen it written but I am not sure if it is correct, may be in casual writting.

Wish you all Happy New Years.
Happy New Years.

Or is it just wrong with the 's'?

In your examples, yes. You will see it correctly only with a possessive 's' as in New Year's Day.
