If i didn't sleep enough hours, I would be grouchy.

Yes. However, you don't need "hours".

No, try using "if I didn't sleep long enough", or another phrase like "if I didn't get enough sleep."

Yes, I also think that 'hours' is not necessary, but I heard a friend say it so I wanted to double check if it was gramatically correct in the sentence he used!
