Verb has to agree with 'those', not 'one'. The right answer is:
He is one of those people who take pleasure in hurting others.

But you wouldn't say "he take pleasure in hurting others" - would you?

As per the rules of subject-verb agreement, a singular subject takes a singular verb, while a plural subject takes a plural verb.

However, in the above construction, you need to focus on the antecedent 'those' to determine the verb.

If in doubt, try turning the sentence around.
Of those (people) who take pleasure in hurting others, he is the one.

It just looks like a sentence where you should focus on 'he' and not on 'those people'. That's why the phrase seems odd to me.

I am pretty sure that subject and pronoun agree in that way for example- "he is one of those freedom fighters who gave THEIR lives for independence" but i am not sure whether we use it in this way with subject-verb as well.
Is there any structure possible in which we use "s" after verb?
