Is it grammatically correct to start a sentence with seen e.g. Seen that one yesterday.

Thank you. Lots of grammar sites say it is correct but I didn't think so. The example I gave to the grammar sites was 'Seen one like that in London'.

That is not correct as it stands. You may hear it in informal conversation for "I have seen one like that in London".

'Seen one like that in London.'

When people say that, I think they usually mean 'I saw one like that in London'.
