1) I saw you dancing last night,
2) I saw that you were dancing last night.

Is there a meaning difference between them?

There is a slight difference of emphasis. The purpose of (1) is more to relate what the speaker saw, while the purpose of (2) is more to remark about the fact that the other person was dancing, and the way that the speaker found out about this (by seeing them) is less important.
