Hi please I can't understand how to use the verb see , are its uses differnt from other verbs?

for example I can't decide whether tenses to use

1-I saw a man (run/running )

what would you coose and why"?

2-what I see (is coming/ coming) is happy days

(which one would you choose and why)

3- what I think (is happening/happening) is wonderful

and if ther is diiffernce in the answer from sentence 3 , please tell me why

Two different meanings.

I saw a man run. (The run is complete)
I saw a man running (I saw him in the act of running).

2-what I see (is coming/ coming) is happy days
Coming is clearer.

"What I see coming are happy days.
Reworded: "Happy days are what I see coming."
