Sallly

Simmer down, Sally.
Although Sally in here seems to be a name(the capital S seems to prove it as well), the character who is called Sally, is named Rainbow Dash, not Sally. Could you tell me how I should interpret this? Applejack(the speaker's name) speaks a heavy and a bit exaggerated Southern accent, and the word Sally might have something to do with it. Thanks in advance!

I suggest that it is merely chosen for the alliteration ( s immer, S ally ). It is like calling a fellow 'Bud' irrespective of his real name.
