Can I say:

While I was seeing your work, I said to myself that you would be the perfect person to take over the bookkeeping.

While I was seeing your work, I said to myself that you would be the perfect person to take over the bookkeeping.

'Seeing' is unnatural here. Say:

While I was looking at your work, I said to myself that
