Rules on ending a sentence.

What are the rules on ending a sentence? For instance, I know some words like "this" or "that" should not be used to end a sentence. What words should not be used to end a sentence and why?

It really depends on the sentence. I never remember being taught that certain words should never go at the end of a sentence (I'm a native English speaker). So it really depends on what the sentence is, and what the situation is.
