Either we or they are doing their homework.

I think I would try to rephrase it: "Either we are doing our homework or they are doing theirs". ) This particular example seems an unlikely thing to ever want to say though.

I think I would try to rephrase it: "Either we are doing our homework or they are doing theirs". (That's assuming you mean that we are doing ours, not theirs.) This particular example seems an unlikely thing to ever want to say though.
