Is the above sentence grammatically correct ?

"Royalty" can mean "members of royal family" or "people of royal descent".
But can we use "Royalty" to refer to a single person as in "Behave like a royalty" ?

It is correct.

Not only can you use royalty as uncountable, it seems to me that you have to! I don't know of a case where we say "a royalty".
