"fish" is used the same for singular and plural because it is a rule of English grammar.

After all, I recently posted an extract from an American newspaper in which McDonald's is used as a plural. It sounds perfectly natural (and terribly incorrect) to my ear, so I suppose it sounds equally good to native ears.
