Riding horse vs riding horses

Hi,

I uses the following sentences:

We were riding horse.

We spent the day riding horse.

Would it be more correct to say:

We were riding horses.

We spent the day riding horses.

I would think that riding horse becomes a single activity we were all doing. Am I correct?

I would think so too - like "eating snake." But we just don't say it that way.

For one individual, we say, "He loves to ride horses." It sounds like he has one foot on each horse, but that's not what it means.
