It is my understanding that there are a number of ways in which the question "How is it going?" can be answered.
1. If the question means "How are you?"
A. you answer with an adjective: good, great, fine
However, somebody told me that I should ONLY respond with the adverb "well" e.g. "It's is going well"
Is this correct?
2. If the question is asking about one's general performance in a project e.g. a class you are taking/teaching, cooking, doing housework then you answer with an adjective: good, great, fine, etc.
B. Can you also answer with the adverb "well" if somebody ask you about the above circumstances mentioned in 2?
My class/cooking, etc is going well.
Please let me know.

Not in my opinion. No. "Well" is OK, but "Fine" is a more typical response.
Say "Well" if you want to sound like a professor.
