Reply to letter from a prof.

Hi all,

I've sent a formal letter to a prof. and he replied signing his name (like "Kind regards, John."). Now, can I reply by saying "Dear John", or am I to reply "Dear Prof. X"?

What's the more proper form?

If you're not a student, 'John' would be acceptable if you know him reasonbably well. Otherwise, although we live in informal times, I'd su
