Remove the unedible part from the vegetable?

Hi,

Greeting!

In my area, after we buy leaf vegetables like spinach and scallion from the market, we need to remove some parts from the vegetables before cutting and cooking them. These parts are either too ugly or withered or have lots of holes.

Do you have a general expression for such activity?

A: Mommy, what are you doing?
B: I am doing the removing of the vegetables. (my proposal)

Well, I can say that your proposal is not good, Stephen—since it means that you are discarding the entire vegetable! I cannot think of a single word that my mother or my wife would use for this process, except perhaps ' trimming the vegetables'.
