Jack tells him to sit down, but Ian refuses, and remains/keeps/stays standing.

Which word is more fitting here where Ian defiantly refuses to sit down.

I don't see a difference between "remains" and "stays". "Keeps" would be wrong because standing is not something you do on an ongoing basis like talking or running.
