Relative pronouns

Can you please tell me why we use 'that' in the following sentence, and not 'which'? 'Choose a pencil THAT you are comfortable writing with.'

And why we use 'which' in the following sentence instead of 'that.'? 'Write a sentence WHICH uses all the letters of the alphabet.'

Either that or which can be used in those sentences because the relative clauses are restrictive, although some sources state that only the former is acceptable.
