Relative clauses and commas

1a. We went to see Mark's father who works in the shopping centre.
1b We went to see Mark's father, who works in the shopping centre.

Which one of these is correct and why?

2. My uncle who lives in New Zealand has a farm.
a) One of my uncles lives in New Zealand and has a farm.
b) The only uncle I have lives in New Zealand and has a farm.

Again, which one of these is correct and why?

My English book has these examples but they aren't explained properly anywhere.
