PEPES AYAM KAMPUNG DAUN KEMANGI (STEAMED RAISING CHICKEN WITH LEMON BASILS IN BANANA LEAVES)
Ingredients
• A half of raising chicken, sliced into 7 pieces • Lemon basils to taste • A tomato, sliced into 7 pieces • 1 cm galangal • 1 cm ginger • 1 cm turmeric • ½ tsp long Joe’s pepper • 6 cloves garlic • 4 cloves shallot • Monosodium glutamate to taste • 1 tsp fine salt • ½ tbsp sugar • 1 tsp pasted candlenuts • 2 limes, to coat the chicken • 4 tbsp cooking oil to sauté • Banana leaves to wrap (alternative : aluminum foils)
Directions 1. Coat the sliced chickens with limes. Set aside for a while, then clean them 2. Grind all of the spices 3. Heat the cooking oil on the frying pan to sauté the grinded spices, wait until it is fragrant. 4. Add the chickens and 3 tbsp of water, stir until it is dry and well-coated 5. Prepare banana leaves or aluminum foils to wrap. Place the banana leaves on the chargrill over medium heat for 1 minute each side (this softens them so they're workable).. 6. Put lemon basils on the banana leaf or aluminum foil 7. Place one piece of chicken on top of the lemon basils, and then place lemon basils on top of the chicken. Add one piece of tomato on top of the lemon basil 8. For banana leaves, Wrap it and pin with toothpick. For aluminum foil, wrap it closely 9. Repeat the process to the other pieces of chicken. One wrap is enough for one piece of chicken 10. Steam it for 40 minute and the Pepes is ready to serve
